Happy Sunday! I hope you are having a lovely day so far ❀ today's post is going to be another recipe style post for all of you foodies (like myself), hope you enjoy...


Recently, I have been (attempting to be) more healthy especially when it comes to food! I am a sucker to any kind of baking or creating recipes to make the whole process much more fun. Also by making your own treats, you know exactly what is going in to them so you can tailor them to your taste and can control how healthy they are!

One of my favourite on-the-go treats has been these Peanut Date Energy Balls! I have seen these style snacks all over Pinterest etc, so I had to see what all of the hype was about...

This recipe was inspired by various recipes I tried and tested, but with my own little twist. A couple of these on-the-go or with a big cup of tea, are the perfect pick-me-up but also a healthy, indulgent treat with ingredients packed with amazing health benefits :)


Ingredients:

✽ 6 medjool dates (pitted)
✽ 6 brazil nuts (crushed into small pieces)
✽ small handful of dried cranberries
✽ 2 tbsps peanut butter (I love crunchy but it's all personal preference!)


1. Start by soaking your dates in warm water for a few minutes, whilst you get out all of the other ingredients (I find this really helps soften the dates which is kinder to your blender!)

2. I use a nutribullet, but any blender or food processor would work! Blend together the dates and peanut butter until combined.

3. Put the peanut-date mixture into a small bowl and add your crushed brazil nuts and cranberries, and stir!

4. Using your hands, roll the mixture in to small, bite-sized balls. I find this recipe usually makes about 8.

5. Store in a sealed container in the fridge for up to 2 weeks and ENJOY.


This recipe is obviously just a guide line of my personal preferences so feel free to experiment and switch up ingredients such as swapping peanut butter for almond butter if you prefer.

Whilst on holiday in Italy, I realised there was one of my favourite stores, Brandy Melville, in Florence. So of course I made sure I hunted it down to have a little shopping spree! It was definitely NOT easy to find as it was quite far from the cluster of main shops, but I finally found it!

I have been to the Brandy Melville on the Kings Road in Chelsea before, but it is quite small so I was really pleased to find that this Brandy Melville covered two floors and had so many products! I had to stop myself picking up everything off of the hangers!

After a very long time deliberating in the changing rooms what to buy, this is what I decided to buy:













It was such a lovely shopping experience because it was actually quite quiet and the staff were really helpful. I would highly recommend popping in if you find yourself in Florence!

So, I have recently come back from nearly 2 weeks on holiday in Italy, which was honestly so amazing and stunning-it is by far the best holiday I've ever been on! We decided this year to explore the main cities of Rome, Florence and Venice and each of them were so overwhelmingly beautiful. On the last day however, we took a boat up to a small island part of Venice called the Lido, and wandered around a bit before spending the afternoon on the beach, such a perfect relaxing way to end the holiday! 

I thought I would make a post to show you the outfit I wore whilst exploring the Lido and a few other snaps I got of this day.

Let's imagine this post went up on Sunday (my usual scheduled day) because I have been so busy recently with being on holiday in Italy (post coming soon), but now I am back hopefully I can start to show my blog some love again.

Anyway, one of my favourite lifestyle posts to read is 'What I Ate Today' posts because I am quite nosy and I love finding out different meal ideas/recipes. I generally follow a mostly plant-based diet just because its what suits my stomach best and it's what I enjoy to eat! So, this is what I eat on a typical day at the moment whilst I am on my summer holidays 


BREAKFAST- Berries with coconut yoghurt, topped with seeds, dried cranberries, dessicated coconut and cinnamon (often with a cup of tea too!).


SNACK#1- Either a smoothie or some fresh fruit (or both!)


LUNCH- Toasted Rye Bread with Manuka Honey and Banana coins, also with a decaf soya latte.


SNACK#2- Cocoa Delight Nakd bar (this flavour is so good!)


DINNER- Baked Sweet Potato filled with hummus, sweetcorn, spinach (and ketchup haha!)


DESSERT/SNACK#3- Glass of Soya Milk and a 'Deliciously Ella' Oat Cookie.
